045 Chef Jen Peters: Gluten-free Tasty Baking

Mar 28, 2022 | Nutrition, Podcast Episode

Good bread is the most fundamentally satisfying of all foods, and good bread with fresh butter, the greatest of feasts” (James Beard)

“She said to me you may have a gluten allergy. And I was like, “well, I’m a chef. I really can’t. It’s just not convenient. I just can’t”. And she said “you know, Jen, your choice of careers doesn’t mean that you can consume everything”. (Chef Jen Peters)

As you will hear, that’s how a delicious, nutritious line of gluten-free flours came about. If gluten is a concern for you, Chef Jen is pleased to offer a 20$ discount of your first order from The Good Flour Company. You will find the links and the coupon code below.

I learned that I, too,  can’t consume everything, as I describe in  my book chapter, ‘You are What You Eat.’ When I needed to lose the 40 lbs of excess fat I gained over 4 months of my sciatica-induced  couch-potato state,  increase muscle and lean-body mass and stimulate my metabolism, I began a program of intermittent fasting, and a low carbohydrate diet.

Almost immediately I found that I was no longer always hungry and thinking constantly about food. My energy level increased and my happy, optimistic mood came back. I had no problem cutting out pasta, rice, and starchy vegetables like potatoes. The only comfort food I missed, was my favourite artisan breads and toast smothered in butter.

I am no chef so I simply adapted and found new comfort foods.  But Imagine the life-changing impact on a professional chef and baker, of discovering that gluten had to be eliminated from your food and all your recipes. That’s what happened to today’s guest, Chef Jen Peters.

Jen Peters’ pivotal discovery about how gluten was affecting her health, set her on a mission to be able to craft a range of gluten-free flours, so that she, and others with gluten-induced disorders, could once again enjoy the breads and baked goods that she loved.

Chef Jen trained in classical French kitchens in restaurants in Vancouver, and London. Being a passionate creative chef who loves pastry and baking, she studied pastry at the Culinary Institute of America, in Hyde Park, New York. Jen set out to teach herself to bake gluten free. Today she is proud to mill and blend easy to use gluten-free flours that taste delicious, have great texture and are nutrition-rich.
